Ever dream of spending time with a master chocolatier diving into a vat of melted chocolate? (Okay, maybe not a vat but deep enough to dip your finger in all the way to the knuckle.) I had just such a Willy Wonka experience the other day, courtesy of Wendy Sherman of La Foret Chocolates in Napa, California. She taught me a few tricks and I learned (finally!) how to temper chocolate. Seems I’d been way too hyper ADD about it. It’s far more relaxed than that. FYI, she used to do the chocolates for The French Laundry; need I say more? Her chocolate creations are DIVINE.
I love it when I get to do off-the-beaten track things when on vacation. In fact, I live for it. Oh, yeah, Sandy helped out. He took pictures and acted as tester (a tough job, but somebody’s gotta do it). All in all a very satisying afternoon.
